Porcini 60% Dark Milk is a single-origin dark milk chocolate bar made with Ugandan cacao and foraged Yunnan porcini — savoury and umami-forward, opening sweet and finishing like forest floor.
Semuliki Forest cacao roasted towards the darker end gives us depth and a brownie-like body — enough weight to stand up to a mushroom without either one winning. Foraged Yunnan porcini brings nutty, umami notes that sit naturally alongside it, and the milk keeps the whole thing from turning austere.
It opens with caramel sweetness. Then the savoury arrives — forest floor, roasted nuts, a suggestion of blue cheese — and stays through the finish. It's the least conventional bar we make, and the one people are most surprised to find they finish.
