We start from a 70% bean-to-bar base and blend in passion fruit powder, which brings the finished bar to 56% cacao. The fruit isn't a coating or a filling; it's ground into the chocolate itself.
A bright passion fruit halo opens the bite, dark cacao rolls through the middle, and the finish lands in candied citrus — passion fruit and bankan together, sweet, jewelled and lingering with zest.
