Jasmine Yuzu 56% Dark Milk is a single-origin dark milk chocolate bar made with Tanzanian cacao, hand-rolled Fujian jasmine pearl tea and candied Japanese yuzu — floral and citrus-bright, with a soft green tea finish.
This is our clearest example of working bean-first. Kokoa Kamili cacao from Tanzania is naturally citrusy and floral, so we roast it light to keep that intact — and then chose two ingredients that run in the same direction rather than against it. The jasmine picks up the floral note already in the bean; the yuzu picks up the citrus. Nothing here is covering anything up.
The tea is hand-rolled jasmine pearl from Fujian, which has a cleaner, more delicate aroma than conventional jasmine. The yuzu is gently candied, so it lifts the chocolate with a fresh citrus finish instead of a sharp one.
