Uganda Chocolate Chunk Cookies are made with our mulled wine chocolate — Semuliki Forest cacao nibs soaked in Marsala, Cointreau and rum, then dried so no alcohol remains, and melanged into bean-to-bar chocolate.
The process is the point. We start with premium Semuliki nibs, soak them in a blend of Marsala wine, Cointreau and rum to draw in the spiced, fruited notes, then dry them completely before melanging. The finished cookie carries the complexity of the infusion with none of the alcohol.
